  25. 200 g Digestive biscuits
  26. 4 tbsp melted unsalted butter

  28. 200 ml whipping cream
  29. 1 tsp gelatin
  30. 50 ml water
  31. 200 g blueberries
  32. 1/2 cup water
  33. 1/2 tsp gelatin
  34. 1 tsp sugar

  9. In a food processor crush digestive cookies alongwith butter until well crumbled.
  10. Put this biscuit mixture in a pan and press firmly to form a nice biscuit base. Refrigerate it for 20 minutes.
  11. In another pot whip the whipping cream until stiff peaks form.

  13. Combine the cream cheese and whipping cream together.
  14. Add the dissolved gelatin mixture to the cream and cream cheese mixture and whisk well until well combined.
  15. Pour this mixture in the pre prepared biscuit pan and refrigerate for 4 hours or overnight.
  16. Separately in a pan add 200g blueberries, half cup water and 1 tsp sugar and cook until thickens. This sauce is ready to pour over cheesecake once it is chilled.
